Chewy Cupcake Brownie

Where else can you find a delicious, chewy brownie for under 17 grams of carbs per serving?

Chewy Cupcake Brownie Ingredients
2 1/4 c. flour

1 1/2 c. unpacked brown sugar

3 tbsp. unpacked brown sugar

9 tbsp. unsweetened cocoa

1 1/2 tsp. baking soda

3/4 tsp. salt

1 1/2 c. water

3/4 c. unsweetened applesauce

1 1/2 tsp. apple cider vinegar

4 1/2 tsp. butter or margarine, melted

1 1/2 tsp. vanilla extract


Directions

Preheat oven to 350.

In large bowl, stir together flour, brown sugar, cocoa, baking soda and salt.

In another bowl, stir together remaining ingredients.

Pour water mixture over flour mixture and stir until batter is smooth.

Spray 12 muffin cups with cooking spray.

Fill cups 1/2 full.


Bake until toothpick inserted comes out clean, about 18 to 20 minutes.
